The yeast is alive because it feeds on the flour and sugar in the dough and gives off carbon dioxide. This is why the dough is expanding, little bubbles of carbon dioxide are blowing it up. You can actually see on one of the videos that one of the dough mixtures deflates a little like a balloon popping!
